Whoopie Pie Maine State Treat

Everyone is talking about the Associated Press article today announcing that the Whoopie Pie is now the Official Maine State Treat. Which bothers me in all kinds of ways!

First, the LD71, An Act To Designate the Official State Treat and the Official State Dessert, was enacted on April 6, 2011 when it was passed by the state’s legislature. Our normally mouthy Governor, in a wise move, decided not to sign it on the grounds that there are more important things to do. Unsigned by the Governor for ten days is the same as if he accepted it. It will take effect 90 days after the 125th Legislature is adjourned. My point is this is week old news!

Hack a Cupcake

This might be an old trick to some but I just saw it for the first time today. Thank you Grace!

  1. Take a cupcake
  2. Remove the paper
  3. Break off the bottom of the cupcake
  4. Press the bottom onto the top of the frosting to make a sandwich.

Voila! Much easier to eat and stay clean. It’s genius!

Kind of like a Whoopie Pie really. Why didn’t Grace show me this years ago?

Dutch Oven Breakfast Pizza

One of my Christmas presents was 101 Things to Do with a Dutch Oven

. I am looking forward to trying many of the recipes in it. One of the things I especially like is that each recipe has a suggestion on cooking temperature and how amny coals may be needed to reach that temperature. Very handy for those who are new to Dutch Oven Cooking outside.

One recipe that I tried last week and enjoyed was “Breakfast Pizza”. The recipe calls for a 14-inch camp oven and feeds 8 people. My oven is only a 12-inch and I only need to feed three plus leftovers for lunch the next day. So the following is my modified recipe for my Dutch oven.

20 Breakfast Saugsage Links – cut into thirds
1 Bell Pepper – diced
1 Onion – diced

Cook the above together then remove and set aside.

1 tube of Refrigerator Buscuits

Arrange in the bottom of the Dutch oven as evenly as possible. Then add over the top the sausage mixture from above.

8 eggs well beaten
1/2 lb grated Monterey Jack cheese
1/2 lb grated mozzarella cheese
1 tomato – diced

Pour eggs over everything in the oven. The sprinkle on the cheese and tomato.

Bake for about 30 minutes at 325 using 8 coals on bottom and 16 on top. Serve with a side of salsa.

This altered recipe served six large slices easily.

Maple Syrup Season

I noticed on my drive to work this week that many maple trees have been tapped for the season. The sap is running! It’s maple syrup season in Maine.

I love Maine maple syrup. I know that Vermont claims the title and theirs is very good. But Maine’s syrup is just a bit better. And I think I can taste the difference! :) Easter Sunday is Maine Maple Sunday. Because of Easter, some sap houses may not be open. But I encourage you to find your local sap house, check their schedule and go visit. Buy some pure gold Maine maple syrup and plan on pancakes real soon! I know I am!
